Seidel opened Fruition in 2007 to showcase the bounty of Colorado's farms and ranches through his cuisine. He has since become a pillar of the Denver culinary scene, earning numerous accolades for his commitment to sustainable farming and creative and innovative cooking approach.

Executive Chef Jarred Russell’s menu frequently changes to reflect the availability of the freshest ingredients, and every dish is crafted with precision and care. We also offer various options for our vegetarian, gluten-free, and vegan diners, as well as a tasting menu that allows our guests to experience the full range of our culinary offerings.

Our intimate dining room provides a warm and inviting atmosphere, perfect for a romantic evening or a celebratory meal with friends and family, and our bar program offers handcrafted cocktails or a glass of wine from our extensive list featuring local and international selections.
